Ingredients

170 g parsnips (peeled & grated)
70 g carrots (peeled & grated)
90 g apple (peeled & grated)
3 C. chicken broth
1 wedge laughing cow lite swiss cheese
salt & pepper to taste ( I don't use either)
Directions
Run parsnip, carrot & apple through a food grinder to chop fine.
Add mixture to a pan with the chicken broth. Bring to a boil, reduce heat and simmer till done. Aprox 5 - 10 minutes.
Remove from heat, allow to cool.
Pour into a blender (or use stick blender) add the laughing cow cheese and blend until smooth.
Add spices to taste and enjoy.
Makes approximately 5, 1 cup servings.
