Introduction

This is so easy and delicious. Guys love it so much I often call it my "real men do eat quiche" quiche. I make my own pie crust, but you can substitute a ready-made one.

This can also be served for brunch as well.

It reheats in a oven pretty well.

I had 2 left over egg yolks that I threw in to use them up.

Saute diced onion and pepper in canola oil until onion is almost clear. Add bulk sausage and continue to saute until light brown. If there's excess oil, drain it off.

In a bowl, mix the egg substitute, half and half, and herbs.
Add mushrooms and browned sausage mixture.

In the pie crust, sprinkle about 1/2 the cheddar and 1/2 the monteray jack cheese. Pour in the egg/sausage mixture. Sprinkle the remaining cheese over the top.

Bake in 425 oven for 15 minutes. Reduce heat and bake an additional 30 minutes. Remove from oven and let sit for about 10-15 minutes.
