Introduction

I make this a LOT! It's my favorite meal to give to new mommies. I LOVE this with hot salsa but now make it with medium for the kids.

Number of Servings: 6

Ingredients


    1lb ground round (I use 97%lean meat)

    1 cup salsa, divided (medium to hot)

    2/3 cup soft whole wheat breadcrumbs (I just use the breadcrumbs from the store)

    1 egg white (I use a whole egg)

    1/4tsp salt

    1/4tsp rubbed sage

    1/4tsp pepper






Directions

If I can only find a package of meat in 1.5 pounds then I just increase the rest of the ingredients a bit.

Combine all ingredients in a large bowl. Shape mixture into a 6x4 inch loaf and place on a rack coated with cooking spray (I skip this part). Place rack in roasting pan. Bake at 400 degrees for 55 mins. Brush/pour remaining 1/2 cup salsa over loaf, and bake 5 additional minutes (optional). Let stand 5 mins before slicing.



Makes "6" servings but we usually only get 4.
