Introduction

Just enough spice, super easy...and oh, so yummy! Just enough spice, super easy...and oh, so yummy!

Ingredients

    Olive Oil, 2 tbsp
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 1 tsp
    Chili powder, 1 tsp
    Cumin, 1 tsp
    Brown Rice,long grain, 1 cup
    Chicken boullion dissolved in water 1.75 cup
    Tomato Sauce, .25 cup

Directions

Saute onion and garlic in oil in a CAST IRON SKILLET.

Once onion is tender, add spices...heat 30 seconds.

Add broth, tomato sauce and rice. Bring to a boil.

Remove from heat and cover skillet with foil. Place in a 350 degree oven for 45 minutes, or until rice is tender and liquid is absorbed.

Makes 8, 1/4 cup servings.
