Ingredients

    1 large box of Sugar Free Jello, Dark Cherry or Cranberry if available
    1 large apple of choice, cored and shredded in food processor, WITH PEEL
    1 Navel Orange, cored and shredded in food processor, WITH PEEL
    1 bag of frozen whole cranberries, shredded in food processor when frozen
    1 can of drained crushed pineapple or pineapple tidbits
    1 cup of chopped pecan pieces

Directions

Prepare the SF Jello using only the boiling water (1/2 the water on box instructions). Stir and let stand in large mixing bowl. Begin processing the cleaned apple and orange and add to the jello bowl. Add the drained can of pineapple. Process the frozen cranberries and add to the mixture. Add the pecan pieces. Stir well, cover and refriderate for one hour. Stir again and return covered to refriderator. I usually make this one or two days ahead of serving as the relish texture and flavor is embellished by this amount of time! The benefit of using jello is that sugar is not needed with the fruit pectins to thicken and calories/carbs are reduced and nutriional value is great. Generally a serving is about 1/2 cup in my family. ENJOY.
