Introduction

Lower sodium preparation uses dried peas and soaked ham pieces. You can use lower sodium ham if you can find it. Made in the slow cooker, flavors mingle and supper is ready when you are! Serve with a side salad or bread choice. I like corn muffins with mine. High in potassium and vitamin A. Lower sodium preparation uses dried peas and soaked ham pieces. Ingredients

1 16 oz. bag dried split peas
    8 oz. ham, cubed
    3/4 cup chopped celery
    3/4 cup chopped onion
    3/4 cup sliced baby carrots
    6 cups hot water

Directions

Trim and cube the ham. Put in a bowl and cover with cold water. Refrigerate for about an hour to remove some of the fat and sodium. Sort and wash peas. Put them in the slow cooker with 6 cups hot water. Add chopped veggies. You can add a bay leaf and ground black pepper to taste if desired. When ham has finished soaking, drain well and add to soup. Cook on high until boiling, reduce to low and stir. It can sit in the slow cooker all day or be eaten when peas and veggies are tender. Serves 8 - 10.
