Ingredients

    2-4 T. raisins
    3 T. balsamic vinegar (or red wine vinegar)
    1 medium onion, very finely sliced
    2 T. olive oil
    1 rounded T. pine nuts (or slivered or sliced almonds)
    1 6 oz. can of tuna, drained

Directions

Combine the raisins and vinegar and set aside so raisins will plump up. Thinly slice the medium onion. In a skillet, over medium-high heat, saute the onion in oil for about 3 minutes, until wilted. Add the nuts and saute another 3-5 minutes, until nuts have colored and become fragrant. Add the plumped raisins and all the vinegar. Toss with the onion mixture a few seconds, then add the tuna and toss again. Serve immediately or at room temperature. Serves 1.
