Introduction
I was a vegetarian. Beef Tartare was what brought me to the dark side. Now I am back as a vegetarian. And this really satisfy my cravings. Awesome with sourdough croutons. Ingredients

3 small beets, diced really finely (thats the trick)
1 shallot, diced finely
3 small cornichon, chopped finely
1 tbsp capers, chopped finely
1 tsp tomato ketchup
1 tsp dijon
1 tsp olive oil
1 tsp worcestershire sauce
1 tsp tabasco sauce
1 tsp extra virgin olive oil (the one that tastes herbal would be the best)
2 tbsp chopped chives
1 cup of parsley, chopped finely
2 to 3 tbsp finely chopped chives
salt and pepper
Directions
Mix everything except the parsley and the chives...
You can add the condiments to your liking, thats mine.
Let the mix rest for about 30 minutes in the fridge. before serving, add the parsley and chives. re-ajust the seasoning.
Serve with croutons and salad.
Might make your poop red, don't freak out tommorow!
