Ingredients

2 tsp. olive oil
1 C. chopped white onion
4 C. vegetable broth
2 C. 1/2 in. dice sweet potatoes
1.5-2 t. chili garlic sauce
1 can diced tomatoes, undrained
1 can cannelloni (white) beans, drained and rinsed
5 C. packed sliced Swiss chard
1.5 t. balsamic vinegar
Directions

Heat dutch oven over med-hi heat, add oil, then onion, & cook 3 min., stirring occasionally. Add broth, sweet potato, and chili garlic sauce; bring to a boil over high heat. Reduce heat and simmer uncovered 5 min. Stir in tomatoes and beans; return to simmer. Stir in Swiss chard. Simmer 5 more min. or until sweet potatoes and chard are tender. Stir in vinegar and ladle into bowls.
We love this as a main course with crusty hot bread!
