Introduction

This is a versatile recipe. I started with a base recipe and have added the Quinoa flour, Flax Seed, and Walnuts for additional protein, fiber, and healthy fats. Ingredients

    1 3/4 cup Brown Rice Flour
    1/4 cup Quinoa Flour
    1 cup Potato Starch (not flour)
    1/2 cup Tapioca Flour/Starch
    1/4 cup Sugar
    2 Tbs. Baking Powder
    2 tsp. Salt
    3 cups Buttermilk
    4 eggs
    1/2 cup canola oil
    1/2 cup walnuts, finely chopped
    1/4 cup flax seed meal

Directions

Mix all dry ingredients together except for the walnuts and flax seed. Mix all wet ingredients together, then combine the dry with the wet and mix well. Stir walnuts and flax seed meal in last. Batter will be very thick. Pour or ladle about 1/4 cup onto each quadrant of a hot 8" waffle iron and close iron. Bake approximately five minutes. Makes 24 - 4 inch square waffles.
