Introduction

Number of Servings: 10

Ingredients

    3/4 cup honey
    1/4 cup water
    1 cup raw cashews
    1 Tbs butter
    1/2 tsp vanilla extract
    1 tsp baking soda

Directions

Boil the honey and water until the mixter reaches soft ball stage (234 degrees on a candy thermomiter).
Add nuts, stirring constantly while boiling mixture 10 - 12 minutes (or untils the mixture turns a golden color)
Remove pan from heat.
Add vanilla, butter and baking soda. Mix well.
Pour brittle on a parchement paper lined cookie sheet (or butter the baking sheet if you don't have parchment paper).
When cool, break into 10 pieces

    Incredible!
    I've been looking for a brittle recipe without corn syrup for a while, and was a bit wary when I saw this. Not only is it easy to make, it is delicious and satisfies that sweet craving we all get. I made a batch to send to my deployed soldier, and had to make more as everyone in his unit loved it - 12/9/14
