Introduction

Ingredients

    160 g soy flour
    2 tsp baking powder
    100 g brown sugar
    300 g apples (one large apple), peeled, cored and chopped
    4 egg whites
    2 tbsp plan soy yogurt

Directions

Turn on the oven to 325°F. Line a square baking pan with a baking paper.
Pour the apples and the egg whites into the food processor and blend until it reaches a smooth consistency. It will look like an apple white smoothie.
In a large mixing bowl combine the flour with the baking powder and the sugar, stir in the apple smoothie and add the yogurt. Stir well with a wooden spoon. Transfer batter into the prepared baking pan and place in the preheated oven. Bake about 45 minutes. Remove from the oven and allow to cool about 5 minutes in the baking pan. After that time, remove the cake from the pan, remove the baking paper and cool completely. The perfect way for this sweet is to be baked at the morning, then to be served for the afternoon tea time.
Just before serving, sprinkle with confectioners' sugar if desired, cut into squares, place each square into a paper cup and serve.
