Introduction

I adapted this from Cook's Illustrated. The original was wonderful, but I needed to cut back on the sodium. I used an immersion blender to make the soup creamy. Ingredients

    2 T smart balance margarine
    2 lbs broccoli chopped, stems trimmed
    1 medium onion chopped
    4 garlic cloves chopped
    11/2 t dry mustard powder
    pinch cayenne pepper
    4 cups low sodium chicken broth
    2 packed cups of fresh sponach
    3/4 cups shredded sharp cheddar cheese.

Directions

Melt the smart balance in a dutch oven add onion garlic and spices unitl fragrant. Roast broccoli in a 500 degree oven until browned. Add broccoli to onion mixture, along with2 cups of chicken broth. Cover and cook over medium high heat for 20 minutes. Add 1 cup water and spinach. After 3 minutes. Use immersion blender ( or food processer) and process until smooth. Add the cheese. Adjust seasonings salt) to taste and serve.
