Ingredients

1 small zucchini
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped mushrooms
1 can diced tomatoes
1 can pinto beans, rinsed
1 package chili mix
1 tbsp olive oil
optional: vegetarian burger crumbles (Morningstar or Quorn)
low fat shredded cheese
fat free sour cream
cilantro
Directions
-in a large pot, cook zucchini, onion, green pepper, mushrooms in about 1 tablespoon olive oil.
-when the vegetables are soft, add the canned tomatoes, pinto beans, and one cup of water.
-Add the vegeterian burger crumbles, if using
-stir in the chili mix
-cook on low heat, about 30 minutes
optionally, top with shredded lowfat cheese, fat free sour cream, pinch of chopped cilantrol
