Ingredients

* Potatoes/Sweet potatoes and mixed veggies optional, but make for a wonderful mix!
Directions
Preheat oven to 450 degrees
On the stovetop, simmer the EVOO, the balsamic vinegar, the garlic, maple syrup and the herbs/spices until slightly thickened (3 - 5 minutes).
* Syrup can and should be adjusted to suit personal tastes (sweet vs. sour)
Place fillets in a glass baking dish and baste with the balsamic sauce and marinate. In a seperate baking dish, place your veggies and top with the sauce.
Bake veggies for 20 minutes or so (while your filets marinate).
Then put your filets in the oven with the veggies for 15 - 20 minute(until fish is flaky and veggies are softened) basting the glaze occasionally.
Remove and serve - Delish!
