Ingredients

    2 1//2 skirt steak
    one yellow pepper
    one red pepper
    1/4 cup (or less) yellow onion
    3/4 cup Thai peanut sauce

Directions

Dice peppers, onions; and cut the skirt steak into strips.
Heat 2 tablespoons of oil and saute the peppers first, then add the onion and saute.
Remove from heat, and keep on a side.
Heat the other two tablespoons of oil at high heat and cook the meat (to your taste - 5-7 minutes). Once meat is cooked then add the peppers mix and the sauce and heat.
It makes 6 servings.
I serve it over a bed of white rice.
