Introduction

Yummy, not too difficult, and even my kids ate it! Yummy, not too difficult, and even my kids ate it!
Number of Servings: 4

Ingredients

    3 T Asian fish sauce (nuoc nam)
    1 T soy sauce
    1 T brown sugar
    1 lb. top round steak
    1 T plus 1 T vegetable oil
    1 large sweet onion, cut into 1/4 inch slices
    1 (up to 3) long red chiles or serrano peppers, seeded and thinly sliced
    3 garlic cloves, cut into long thin slices
    2 tsp minced, peeled fresh ginger
    1 c loosely packed basil leaves

Directions

1. In medium bowl, combine fish sauce, soy and brown sugar. Cut beef into thin slices. Add slices to suace mixture, tossing to coat. Cover and refrigerate for 30 minutes to marinate.
2. In skillet, heat one T of oil over high heat. Add beef and cook, stirring frequently until no longer pink, about 1 minute if pan is properly heated. Do not overcook. Put beef to the side in a separate bowl.
3. Heat remaining oil in pan, add onion and cook for about 3 minutes til onion is tender-crisp. Add chilies, garlic and ginger and cook about 30 more seconds. (Note - if your kids are like mine, I did the pepper separate to keep theirs from getting too spicy. Just cook solo after the last step for just a minute then add to adult plates.)
4. Return beef to skillet and add basil, heat through. Serve over rice (not included in calculations)
