Ingredients

6 cups (about 500g) oats
1/2 cup desiccated coconut
1/2 cup sunflower seeds
1/2 cup flaxseeds (linseeds)
1/2 cup almond meal
1 tblsp cinnamon
1/2 cup buckwheat flour
2/3 cup oil
2/3 cup honey
Directions
Put oats in a large roasting pan and bake at around 180C (350F) for around ten minutes, stirring part-way through to keep the edges from burning. Remove from oven, stir in the dry ingredients, then add the honey and oil, mixing thoroughly until fully coated. Spread evenly in the pan, and return to the oven for about 10-15 minutes, stirring every five minutes. Leave to cool completely (can be overnight) before removing from pan and putting in an airtight container.
Makes about 20 1/2-cup servings; eat with milk (or almond milk), and fresh fruit for breakfast.
Note: this can be adjusted in many ways to suit personal tastes, eg pumpkin seeds instead of sunflower (or 1/4 cup of each), sesame seeds instead of flaxseed, regular flour rather than buckwheat and/or almond meal; part carob syrup or molasses instead of honey. Just make sure there are around 2.5 cups of dry ingredients, 2/3 cup oil and 2/3 cup sweetening such as honey .
