Ingredients

3 Chicken Breasts
300g Chorizo Sausage
2 Bell Peppers
1 Yellow Onion
4 Sticks Celery
4 Garlic cloves
2 Medium Sweet Potatoes
1tsp Thyme
1tsp Paprika
1tsp Cayenne Pepper
1tsp Black Pepper
Sea Salt (dash)
1Ltr Hot Chicken Stock/Broth
3tbsp plain flour
4 Bay Leaves
Directions
Season meat with the cayenne, paprika, salt and black pepper. Cook in large non-stick pot (or spray with Pam) for about 10 mins until browned.
Remove meat to a bowl on the side (leaving juices in pan). Then add your onion, celery and bell peppers to cooking pan. Cook for about 10 mins on medium heat til softened.
Now add the flour. Stir and cook for about 10 mins. Now add the garlic, bay leaves, thyme, browned meats and chopped sweet potatoes. Stir for a minute then pour in the hot chicken stock.
Bring it all to the boil. Then turn down to a low-medium heat and simmer for about 30 mins.
Now give it all a good stir. The potato should break up with your stirring spoon to thicken the gumbo.
Season to taste if necessary, and serve.
