Introduction

Ingredients

2 cups sweet potato (baked then removed from skin)
2 eggs
1 1/4 cups evaporated milk
2/3 cup granulated sugar
1/3 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
4 tablespoons butter (melted)
1 pie crust, 9", unbaked
Directions
Preheat oven to 425*.
Put cooked and peeled sweet potatoes into mixing bowl and mix at medium speed until all of the stringiness is broken down. Turn down to low and add eggs, evaporated milk, both sugars, salt, cinnamon, nutmeg, and butter. When ingredients are incorporated, turn mixer back up to medium and mix until creamy smooth. Pour into unbaked pie shell.
Bake in preheated oven for 10 minutes. Reduce heat to 300* and bake for about another 45 to 50 minutes, or until the filling is mostly firm. When there is still just barely a little jiggle in the center of the pie, remove from oven. Let cool for about an hour (if you can stand it that long!) before serving.
Can be served with whipped cream, marshmallow fluff, meringue, or whatever your favorite topping is, but I like it best untopped.
The nutritional info above is for 8 slices, but I know that most people around the holidays aren't going to go for a wee little sliver. In 6 equally cut wedges, the calories are 465 and carbs are 68.5. This is by no means whatsoever a diet food!
