Introduction

Ingredients

    1 3/4 C whole wheat flour
    1/4 C all-purpose flour
    1 C rolled oats
    1/2 C packed brown sugar
    1/4 tsp salt
    2 tsp baking powder
    1/2 C cold butter (may use vegan substitute. Earth Balance has similar consistency to real butter)
    Zest of one lemon
    3/4 C milk, (may use any percentage or soy substitute)
    Icing sugar (about 1 C)

Directions

Mix first 6 ingredients in bowl. Cut in butter. Add lemon rind. Make well in center and pour in milk. Mix until combined then roll out on lightly floured surface and knead a few times until well blended. Roll out in a circle to 3/4 inch thickness. Score in 8th’s. Place on greased cookie sheet or oven stone. Bake at 400F for 15-17 min.

Make glaze with icing sugar and the juice of the lemon. Drizzle over top. Serve warm. (But delicious cold too!)
