I lightened up this recipe by halving the butter, sugar, and salt; adding unsweetened applesauce; and using egg whites and low fat cottage cheese instead of their fattier counterparts. Ingredients

2/3 cup all purpose flour
1/2 cup yellow corn meal
1 1/2 Tbsp granulated sugar (4 1/2 tsp)
1 Tbsp baking powder
1/2 tsp salt
8 egg whites
1 (10 oz) package chopped frozen broccoli, thawed and drained
1 cup 1% milk fat cottage cheese
1 small, or 1/2 large onion, chopped
1/2 cup unsweetened applesauce
2 Tbsp butter, melted
non-stick baking spray
Directions
Preheat oven to 400 degrees F (200 degrees C).
Lightly grease an 11x7 inch baking pan with non stick baking spray.
Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk. Set aside.
In a separate bowl, mix together egg whites, cottage cheese, onion, unsweetened applesauce and butter. Slowly stir in the flour mixture. Fold in the broccoli. Pour batter into prepared pan.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into the center of the pan comes out clean.
