Ingredients

    1 cup flour
    2/3 cup very warm water
    2 1/4 tsp pizza yeast
    1 1/2 tsp sugar
    3 tbsp canola oil
    3/4 - 1 1/4 cup flour
    1 medium zucchini, sliced into rounds
    1/4 cup sliced oyster mushrooms
    1/4 cup fresh basil
    1/2 medium red onion, sliced into rings
    1 large red bell pepper cut into strips
    125 ml Oliviieri Sundried Tomato Pesto
    2 cups shredded Mozzarella Part skim cheese

Directions

Make pizza dough by combining 1 cup flour, yeast, sugar, salt in a large bowl. Add water and oil. Mix until well blended. Add enough flour to make a soft dough (1 cup flour, more or less as needed) Dough should form a ball. Change to kneading attachment and knead for 4-5 minutes (or by hand)
Spread into a 15" cookie sheet.
Grill veggies.
Spread dough with pesto, layer on basil, zucchini, onions, peppers, mushrooms and cheese.
Bake on the lowest rack of oven, preheated to 400 for 15-20 minutes until crust is golden and cheese is melted.
