Introduction

I slightly modified this recipe and made 1.5 oz donuts and .5 oz doughnut holes. Calories etc are per donut hole. Multiply x 3 for a doughnut. Ingredients

    1 cup milk (heated approximately 1 minute in microwave)
    1/4 cup warm water (110 degrees F.)
    2 tablespoons butter, melted
    2/3 cup granulated sugar
    2 eggs, room temperature and beaten
    5 cups bread flour or all-purpose flour
    1/2 teaspoon salt
    1/4 teaspoon ground nutmeg
    1 tablespoon vital wheat gluten (optional)*
    3 teaspoons instant active dry yeast
    Cinnamon Topping (see recipe below)

    Cinnamon Topping:
    1/2 cup butter, melted
    1 1/2 cups granulated sugar
    1 tablespoon ground cinnamon


Directions

Makes 69 half ounce donut holes or you can make 1.5 ounce donuts. I used a skinny shot glass and a biscuit cutter.

Add water and yeast together. Set aside. Add the 2 T butter to the milk and microwave 1 min. Put dry ingredients and eggs in mixer. Pour in yeast mixture. Use milk/butter mixer to get all of yeast mixture out of its container and into mixer. Mix for 8 minutes in your mixer if it can handle doughs or knead by hand for 15 mins. Roll to 1/3 inch on a floured surface. Cut out as desired. Put on cookie sheet lined with parchment. Bake at 375 for 8 mins or until lightly browned (do not let them get very brown). Let set two minutes. Brush butter on with a pastry brush and put cinnamon sugar in a baggie. Shake donut in bag to cover.

    Incredible!
    These are amazing! They do actually taste like fried donuts...almost :P Close enough where you dont miss them "bad" ones :) Instead of brushing mine with butter to get the cinnamon sugar to stick, i did a quick spray of butter flavor cooking spray...worked great! - 6/2/11
