Ingredients

    689 g red potatoes (approx 6 med potatoes)
    1 small stalk fresh broccoli, chopped
    2 med celery stalks, chopped
    1/4 c red onion, chopped
    1 c fresh spinach, chopped
    1/2 small red bell pepper, chopped
    1/4 (1 oz) reduced fat feta
    1/4 fat free mayo
    1 T stoneground mustard
    1 T red wine vinegar
    1 T lemon juice
    dill
    garlic powder
    black pepper
    thyme

Directions

makes 4, 1 cup servings.

cube potatoes and boil until tender

while potatoes are cooking:
chop vegetables and add to large mixing bowl
add feta
when potatoes are done and drained, add to bowl

stir in mayo, mustard, vinegar and lemon juice
blend well
add seasonings and blend again
