Ingredients

1.5 pound chicken breast
4 garlic cloves
1 small onion (cut into thin strips)
3 Serrano peppers or Thai chili peppers (to taste)
1.5 cups red peppers (cut into thin strips)
1.5 cups green peppers (cut into thin strips)
.5 cup fat free chicken broth
3 teaspoons Asian fish sauce
3 teaspoons sugar
3 teaspoons light soy sauce
.5 teaspoon ground black pepper
1.5 cups Asian basil leaves, washed and patted dry
yield of 1 small lime (or to taste)
Directions
Freeze chicken in Ziploc bag for 30 minutes to make slicing easier. Cut chicken lengthwise into thin slices. Cut slices lengthwise into thin strips.
Spray with canola oil cooking spray. Heat wok over medium-high heat until hot. Add garlic and onion and stir-fry until golden. Add chicken and cook, stirring constantly to prevent sticking. Add red and green peppers.
In a small bowl mix all other ingredients except basil. Pour over chicken and cook for two-three minutes more. Add basil and stir-fry for 30 seconds. Stir in lime juice.
Serve over brown or white rice.
