Introduction

This makes a decent size and very satisfying cookie. My kids love them and I'm sneaking 5 grams of fiber into them through an after dinner dessert! hahaha! Enjoy! Ingredients

    1 C. packed brown sugar
    1 C. sugar
    1-1/2 sticks butter (light or regular margarine also works)
    1/4 C. vegetable shortening
    2 Eggs (or 1/2 C. cholesterol-free egg product)
    3 T. Milk
    2 t. vanilla extract
    2-1/2 C Old Fashioned Oats
    2 C. flour (I use whole wheat flour and it works perfectly)
    1 t. baking powder
    1 t. baking soda
    1 t salt
    2 C. dried cranberries (or raisins)
    1 C. Walnuts (or any nut you like)

Directions

Beat sugars, butter and shortening until creamy. Add eggs, milk and vanilla; mix well. Combine oats, wheat flour, baking powder, baking soda and 1 teaspoon salt (if desired), in separate bowl. Add to margarine mixture; mix well. Stir in dried cranberries and walnuts. Chill dough for 1 hour. Preheat oven to 350 degrees F. Drop by rounded tablespoons into ungreased cookie sheet. Bake 18 minutes. Let stand 5 minutes before removing to racks to cool. Makes 5 dozen cookies (1 cookie per serving).
