Ingredients

1 boneless skinless chicken breast, pounded thin
1 tablespoon olive oil
1 slice center cut bacon, cut into 1/2-inch pieces
1/4 cup fresh mushrooms
1/2 cup colby jack cheese, shredded
1 tablespoon fresh chives, chopped
Directions
Preheat oven to 350.
Fry bacon pieces until brown and crispy; drain and set aside.
Sauté chicken breast over medium heat with olive oil, turning to brown on both sides, until a slight golden color and cooked in the middle but not dry.
Remove from the pan and place in a rimmed baking dish.
Cover with a layer of mushrooms, crumbled bacon and sprinkle with shredded colby jack cheese.
Bake until cheese melts, about 15 minutes.
Sprinkle with chives and serve with honey mustard sauce on the side, if desired.
