Ingredients

    1 16 oz can black beans, drained and rinsed
    1/2 green bell pepper, cut into strips
    1/2 onion, cut into wedges
    3 cloves garlic, peeled
    2 eggs
    1 T chili powder
    1 T cumin
    1 tsp Thai chili sauce
    3/4 cup bread crumbs
    4 C steamed broccoli
    4 Arnold Sandwhich Thins

Directions

Serves 4

1. Preheat oven to 375 and lightly oil a baking sheet
2. In medium bowl, mash black beans with a fork until pasty, make sure all excess liquid is drained
3. In a food processor, finely chop bell pepper, onion and garlic. Drain off excess liquid and pt dry. Mix with mashed beans.
4. In a small bowl, stir together eggs, chili powder, cumin, and chili sauce
5. Stir the egg mixture into the mashed beans. Mix in the bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
6. Serve on Arnolds sandwhich Thin with favorite toppings and 1 C steamed broccoli on the side for a complete meal.
