Ingredients

    1.5 lbs small potatoes (I used Klamath pearl potatoes but you can use any other kind of small potatoes)
    2 cloves of garlic
    2 tbsp extra virgin olive oil
    2 tbsp lemon juice
    1 tbsp fresh rosemary
    1 tsp salt

Directions

Preheat the oven to 400 degrees. Cut up the potatoes and place in a bowl. Toss with olive oil, lemon juice, garlic, rosemary, and salt, so the potatoes are coated. Transfer the mixture to a roasting pan or dish, and put in the oven for 40 minutes. Makes 4 servings.
