Ingredients

    6 oz whote wheat spaghetti
    6 cups boiling water
    1 tbsp salt

    1 cup red pepper, julienned
    1 cup scallions, sliced
    1 bag classic cole slaw mix
    3 cups snow peas (parboiled in the pasta water ~1 minute before it is done)

    Dressing
    1/2 cup reduced fat peanut butter
    1/2 cup reduced salt soy sauce
    2 tbls sesame oil
    1 tbls grated fresh ginger
    1/4-1/2 cup boiling water

Directions

Start the pasta water boiling. Meanwhile add all oof the dressing ingredients into a smaill bowl. When water is boiling add 1/4 to 1/2 a cup to the dressing to help dissolve the peanut butter. Whisk the dressing until smooth. Add the salt and pasta to the water and cook until al dente. About 1 minute before the pasta is done, add the snow peas and par boil them. Chop the peppers and scallions and add them to a large bowl. Add the cole slaw mix to the peppers and scallions. Drain the pasta and snow peas and add them to the large bowl. Add the dressing and toss.
