Introduction

Ingredients

    1/2 cup unsalted butter (1 stick), room temperature
    2/3 cup granulated sugar
    1 cup mashed bananas (about 2 large bananas)
    1 large or extra large egg
    1 1/2 teaspoons vanilla extract
    1/3 cup 2% milk
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 cup all purpose flour
    1 cup whole wheat flour
    3/4 cup semi-sweet chocolate chips

Directions

1. Preheat oven to 350 degrees
2. Prepare 12 muffin cups by lining with paper liners, or lightly greasing with cooking spray
3. Whisk together flours, baking powder, baking soda and salt - set aside
4. Using hand or stand mixer, beat butter and sugar until creamy and smooth
5. Add mashed banana, egg, vanilla and milk; beat until fully combined
6. Add dry ingredients and beat on low until fully incorporated
7. Fold in chocolate chips
8. Using a muffin scoop, fill 12 muffin cups quite full and rounded
9. If desired, sprinkle large crystal sugar on top of each
10. Bake 20 - 22 minutes, until toothpick comes out clean
11. Cool pan on rack for a few minutes, then take out muffins to cool directly on rack
