Ingredients

    * Lentils, 100 grams
    * Carrots, cooked, 2 carrot
    * Onions, raw, 1 medium (2-1/2" dia)
    * Sweet potato, 1 sweetpotato, 5" long
    * Egg, fresh, 1 large
    * Bread crumbs, dry, grated, plain, 50 grams
    * *Cumin seed, 1 tsp
    * *Corriander, 1 tsp
    * *Mace, 1 tsp
    * Garlic powder, 1 tsp
    * *Spinach, cooked, 1 cup
    * *Ground tumeric, 1 tbsp
    * Chili powder, 1 tsp
    * Couscous, 1 cup, raw(giant cous cous is the best)
    * low fat cooking spray
    * 1/2 veggie stock cube

Directions

1) wash and boil your lentils until soft and tender, in seperate pot boil your giant cous cous with half a veggie stock cube remove and drain when soft and tender
2) peel and boil your sweet potato until soft and tender, when it is ready remove it from the water, wait for it to cool and smash it together until it has a 'mashed potato-like' texture
3) finley dice onion and saute with low fat cooking spray until translucent
4) peel carrots and continue to peel after top layer has been removed, chop the peels finley
5) Combined cooked lentils, onions, carrots, and sweet potato with breadcrumbs and the egg, mix very well, hands work the best
6) shape into Kofta (oblong tubes around the length of your pointer finger) and place in heated pan sprayed with low-fat cooking spray
7) cook until brown on each side
8) serve on top of couscous, very good with a side of greek-style yogurt or tzetzeki
