Ingredients

    1 pound dry adzuki beans
    6 cups water (at least)
    1 cup finely diced onion
    1 tbsp olive oil
    1 tbsp minced garlic
    1 cup unsweetened applesauce
    1 tbsp molasses + 2 tbsp Steviva Blend OR 1/4 cup brown sugar
    1/2 cup tomato sauce
    1 tbsp dijon mustard
    1/2 tsp curry powder
    1/2 tsp sea salt
    black pepper

    OPTIONAL:
    1/4 cup cooked, crumbled bacon

Directions

Bring beans and water to a boil for 15 minutes. Turn down to a simmer and cook for 2 hours or until tender.
Saute onion and garlic in olive oil.
Drain beans.
Put all the ingredients into a slow cooker and allow to cook for several hours, or put in a covered casserole and cook for at least one hour at 350 degrees.

    Does this make 8 cups (8, 1-cup servings)? Do you know equivalent canned adzuki to 1 lb. dried beans? Can you tell us how many grams of sugar per serving? I definitely would like to try this! Thanks so much! - 9/2/19
