Ingredients

    1 tbs olive oil
    1/2 cup onion
    1/2 cup thinly sliced carrots
    1 tbs chopped garlic
    1/2 jalapeno pepper chopped finely (seeds removed)
    1 can diced stewing tomatoes
    1/2 bag frozen broccoli and cauliflower florets
    1.5 tbs curry powder
    1 tbs cumin
    4 tsp garam masala
    4 oz greek yogurt, plain

Directions

Heat oil over medium heat in a skillet. Add onions and carrot. When onion begins to wilt, add jalapeno and garlic. Cook until garlic begins to brown. Add stewing tomatoes with liquid and spices. Reduce heat to low and simmer for 20 minutes. Just prior to serving, stir in the yogurt until smooth.
Serve over rice (not included in calculation).
Makes 5 3/4 cup servings.
