Ingredients

1 cup dried Chickpeas (Garbanzo Beans)
3/4 cup plain nonfat yogurt
3 tablespoons fresh lemon juice
6 garlic cloves
3 teaspoons olive oil
3/4 teaspoon salt
3/4 teaspoon ground cumin
1/4 teaspoon ground allspice
2 tbsp water
Directions
This recipe calls for dried chickpeas in an effort to reduce sodium content. 1 cup of dried chickpeas will come out to approximately 3 cups of chickpeas ready to use in this recipe.
To prepare chickpeas, soak 1 cup of dried chickpeas in several cups of water for about 12 hours. Drain. Boil chickpeas in several cups of unsalted water until they are tender (adding water as necessary - these can take a 2-3 hours to cook adequately). Once chickpeas are tender, drain and allow to cool to room temperature.
Combine all ingredients in a food processor or blender and process until smooth. Serves 12 (1/4 cup per serving).
