Introduction

Definitely one of my favorite comfort foods. It's my go-to vegan substitute for a grilled cheese sandwich. I don't care for the taste of margarine, so "buttering" the bread with a little bit of the hummus, creates a nice crunch on the outside of the sandwich (without a nasty greasy feel). Ingredients

    2 slices of whole grain bread
    1/4 cup hummus
    1/4 cup baby spinach leaves
    2 slices of pickled beets (optional)

Directions

Pre-heat George Forman-type non-stick grill.

Spread a thin layer of hummus on the outside of both slices of bread.

Spread remainder of hummus on other side of bread slices.

Place one slice on grill (thick hummus side up), place pickled beets on hummus if using, then the spinach leaves, and top with second bread slice (thick hummus side down).

Close grill and place heavy object on top. Grill for 5 minutes or until sandwich has desired color and crispness.
