Ingredients

    2 medium potatoes, shredded
    2 large eggs
    1/4 cup red onions
    1/4 cup flour
    salt and pepper to taste
    ground mustard
    granulated garlic

Directions

Mix all ingredients together. Heat oil in nonstick skillet. Place medium spoonfuls of batter into the skillet, cook until browned on both sides.
Makes 6 pancakes
