Ingredients

    1/4 c canola oil
    1 c stone-ground cornmeal
    1/2 c wholewheat flour
    1/2 all-purpose unbleached flour
    2 t baking powder
    2 eggs
    2 T honey or maple syrup
    1 1/4 lowfat plain yogurt

Directions

preheat oven to 425 C. mix dry ingredients; mix wet ingredients; fold dry ingredients into wet. Do not overmix. Pour into a greased cast-iron skillet (10) and bake about 25 minutes.
