Ingredients

    - Flax Seed Meal (ground flax), 1/4 cup
    - Baking Powder, 1/2 tsp
    - Cinnamon, ground, powder, 1 tsp
    - Pumpkin Pie Spice Seasoning, 1 tsp
    - Cocoa; Hershey's Unsweetened, 1 tbsp
    - Splenda , 4 tsp
    - Egg, fresh, 1 large
    - Organic Smart Balance Butter, 1 tbsp

Directions

Mix all dry ingredients in a coffee mug or bowl, then stir in wet ingredients until well blended. Microwave for one minute.

    This was awesome! Thank you so much. I needed something like this. I used real butter and I put in a tbsp. of natural PB and ate it with heavy cream! Would be great with real whipped cream too. You could break the muffin into pieces and layer with whipped cream in a parfait dish. A real treat! - 11/15/10

    THIS IS A GREAT MUFFIN,I ADD 1/4 C OF PUMPKIN AND SOMETIMES A 1/4 OF GROUND ALMONDS. I ALSO USE 2 TBS COCOA. SOMETIMES I PUT A LITTLE CREAM CHEESE OR SMART BALANCE ON IT. - 2/4/10

    Nuke for 52 seconds and it looks a little wet at first but it dries to a moist muffin before you can eat it. Love it. - 12/10/09

    I just made this. Fast, easy, tasty. Great alternative for lo-carb breakfast and healthy too. I used butter but will try coconut oil next time to see how it goes as a dairy substitute. The muffin had a bready texture and is slightly dry-ish, but tastes quite pleasant. Satisfies a craving for breads. - 4/15/08

    I just double-checked the calories on this recipe, by using the full nutritional breakdown view. The calories for one muffin should be 325 not 307.7. I don't know why the Nutritional Info is wrong - I hope this isn't true for other recipes on Spark. - 10/27/13

    Fast, easy to make, easy clean-up, came out of the cup easily, and not too many ingredients. AND it tasted good AND its texture was wonderfully bread-like AND I can see many ways to vary this slightly to go sweet or savory. This is JUST the kind of recipe that earns 5 stars! - 2/12/10

    Good. Figured out through 2 tries that we prefer the gold flax (really did not like this with the red flax). It would be good if the recipe said VEFAJARDO's preference. Used unsalted butter for Atkins husband, but I will try with SB margarine. - 9/3/15

    I wonder whether you can change this a little as we do not have pumpkin spice as we eat pumpkin as a vegtable and I find splenda has a strange effect on me that is not good I will try stevia.

    Fantastic. I put the oragnic balance in the recipe and not sure if that was right, but it turned out great. First bite tasted only a bit dry but washed down with coffee and overall would rate this as fantastic!!! have make it dozens of times and saved recipe to my cookbook. - 7/4/08

  • I made it with a teaspoon of chia seeds since I had no spice at all. I also cut up one block of Hershey's baking bar to make dark chocolate chips. Delicious!

    The recipe is very forgiving. I'm adding pecans next time.

    I was not sure if 4tsp splenda was 2 packets which = 4tsp sugar or literally - 3/30/15

  • I used almond flour and added 1 t olive oil, to combat the dryness others mentioned. Used stevia instead of splenda. I didn't have pumpkin pie spice, but it was fab! It came out of the cup easily. I uploaded the pic. - 10/13/12
