Ingredients

    - Flax Seed Meal (ground flax), 1/4 cup
    - Baking Powder, 1/2 tsp
    - Cinnamon, ground, powder, 1 tsp
    - Pumpkin Pie Spice Seasoning, 1 tsp
    - Cocoa; Hershey's Unsweetened, 1 tbsp
    - Splenda , 4 tsp
    - Egg, fresh, 1 large
    - Organic Smart Balance Butter, 1 tbsp

Directions

Mix all dry ingredients in a coffee mug or bowl, then stir in wet ingredients until well blended. Microwave for one minute.

    This was awesome! Thank you so much. I needed something like this. I used real butter and I put in a tbsp. of natural PB and ate it with heavy cream! Would be great with real whipped cream too. You could break the muffin into pieces and layer with whipped cream in a parfait dish. A real treat! - 11/15/10

    THIS IS A GREAT MUFFIN,I ADD 1/4 C OF PUMPKIN AND SOMETIMES A 1/4 OF GROUND ALMONDS. I ALSO USE 2 TBS COCOA. SOMETIMES I PUT A LITTLE CREAM CHEESE OR SMART BALANCE ON IT. - 2/4/10

    Nuke for 52 seconds and it looks a little wet at first but it dries to a moist muffin before you can eat it. Love it. - 12/10/09

    I just made this. Fast, easy, tasty. Great alternative for lo-carb breakfast and healthy too. I used butter but will try coconut oil next time to see how it goes as a dairy substitute. The muffin had a bready texture and is slightly dry-ish, but tastes quite pleasant. Satisfies a craving for breads. - 4/15/08
