These waffles use acorn meal and pecans from our fall harvest, but wheat flour may be substituted for the acorns and any nut may replace the pecans.Makes 4, very filling, waffles. Ingredients

1 c. unbleached flour
3/4 c. acorn meal
1 tbsp. baking powder
1/2 tsp. salt
1/4 c. wheat germ
2 eggs
1/4 c. oil
1 1/2 c. milk
1 c. pecans, ground
1 ripe banana
3 tbsp. sour cream
Directions
Sift flour, baking powder and salt into bowl. Add wheat germ and acorn meal. Combine eggs and oil; gradually beat in milk. Add to flour mixture. Add pecans to mixture. With fork mash banana and add sour cream until creamy, then add to mixture. Bake in preheated and oiled waffle iron.
