Ingredients

    Flour, white, all-purpose, 1 cup
    Whole Wheat Flour, 1 cup
    Granulated Sugar, .5 cup
    Brown Sugar, 1 cup, packed
    Vital wheat gluten, 1 Tb
    Powdered Nonfat Dry Milk, 1 Tb
    Baking Powder, 2 tsp
    Baking Soda, 1 tsp
    Salt, 1 tsp
    Cinnamon, ground, 1 tsp
    Nutmeg, ground, 1 tsp
    Ginger, ground, 1 tsp
    Allspice, 1 tsp
    Pumpkin, canned, 29oz
    Egg white, 2 large or 1/2 cup substitute
    Milk, evaporated, 1.5 cup
    butter, melted, 2Tb
    Dark rum, 2 Tb

Directions

Preheat oven to 350F. Whisk dry ingredients together, set aside. Mix wet ingredients, then add dry mixture. Pour into two greased loaf pans. Bake for 45 minutes, or until toothpick inserted in middle comes out clean. Makes 2 loaves, about 12 slices each.

If you don't have rum, you could substitute 1 tsp vanilla extract.
