Ingredients

1 tspn vegetable oil
1 onion, chopped
5 garlic cloves, chopped
.75 cup uncooked quinoa
1.5 cup vegetable broth
1 tspn ground cumin
.25 tspn cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 oz) cans of black beans, rinsed and drained
.5 cup chopped fresh cilantro
Directions
1. Heat oil in medium saucepan over medium heat. stir in onion and garlic. Saute until onion is slightly brown.
2. mix in quinoa, cover with vegetable broth. Season with cumin, cayenne pepper, pepper, and salt. Bring mixture to a boil. Cover , reduce heat, and simmer for 20 min.
3. Stir in froze corn. Simmer for 5 mins. Mix in the black beans and cilantro.
