Ingredients

    2 Cups Romain lettuce, chopped
    1 Cup Baby Spinach & Arugula Mix, chopped
    0.5 Cups (2 oz) Baby Cucumber (with peel)
    0.5 Cups (2 oz) Green Peppers, diced
    2 oz (1 small) red tomato, raw, wedges
    2 slices onion, raw, diced
    2 oz (1/2 small Haas) Avacado, diced and tossed with lemon juice
    4 oz boneless, skinless chicken breast(remove)
    1/4 Cup Shredded 2% Mozzarella

Directions

Makes one large lunch salad.

Cook chicken, spiced to taste, and dice. Assemble all ingredients and serve with desired dressing.
