Introduction

This is from McCormick Seasons blend package, but all the ingredients are here so you can make it on your own. I lowered the sodium by using less than it called for and Salt Sense. Since flour tortillas vary in size and calories / fat I did not include them in the ingredients. You will have to add them depending on what kind and how many you use. Enjoy! Ingredients

    From the mix:
    1 tsp minced dry GARLIC
    1 tsp minced dry ONION
    1 tsp ground CUMIN
    1 tsp course ground BLACK PEPPER
    1 tsp dry OREGANO leaves
    1 tsp dry CILANTRO leaves

    Additional Ingredients:
    1/4 c lime juice
    1/4 c orange juice
    2 tbsp olive oil
    1/4 tsp salt sense
    1 1/2 lbs. boneless skinless chicken breast, cut into thin strips

    1 medium green pepper cut in strips
    1 medium red or yellow pepper cut in strips
    1 medium onion cut in strips

    8 flour tortillas 8-inch size (not included in calculations)

    Additional Toppings (not included)
    sour cream
    salsa
    lettuce
    tomato
    guacamole
    shredded cheese

Directions

1. Mix juices, oil, spices in bowl. Reserve 1/4. Put remaining in plastic bag with chicken. Marinate for 30 + min.

2. Cook in large skillet on medium heat chicken 3 min or until brown. Remove.

3. Add to skillet pepper, onion and reserved marinade. Cook 5 min.

4. Return chicken to skillet. Cook 2-3 min until heated through.

5. Spoon 1/8 chicken mixture into 8 warmed tortillas. Serve with toppings.

The recipe says "makes 8 servings - One each" though 2 is a better meal. It is the tortillas and cheese topping that will kill your counts, so look for lower carb, lower fat versions.

We served this on "Make your own" night with a side of rice and beans and cole slaw.
