Introduction

Banana Cream Pie without the fat! Straight from Newfoundland, my girlfriend served this amazing dessert and I had to have the recipe. It is surprisingly simple to prepare, combining fresh bananas, with vanilla pudding, light cool whip and saltines which make a flaky, low fat pastry layer. Would work just as well with other fruits like strawberries. I used regular vanilla pudding but light pudding should work as well. Banana Cream Pie without the fat! Ingredients

    1 Instant Vanilla Pudding Mix
    3 cups skim milk
    1 tub light Cool Whip (thawed overnight)
    60 or so soda crackers (like Premium Plus)
    3 medium bananas sliced

Directions

Makes sixteen 2x2" servings

1. In a large bowl, whisk pudding mix and milk for 2 minutes until it thickens. Fold in Cool Whip

2. Add 1 layer of crackers to the bottom of a 9x13 cake pan. Cover with half of the vanilla mix. Top with another layer of crackers. Spread other half of vanilla on top.

3. Cover and refrigerate for 4 hours to allow crackers to soften. Top with a layer of sliced bananas and serve.
