Ingredients

    3 bag frozen mixed vegetables (corn/peas/carrots/green beans
    1 can petite cut diced tomatoes
    6-8 cups organic vegetable broth (can use chicken)
    1/3 cup long grain brown rice

Directions

Throw together in a big pot and simmer until the rice is cooked. It makes about 5 servings of 3.5 cups, but you can spread it further. It keeps for a few weeks. I use the peas/carrots/corn/green beans for veggies. I add inulin for prebiotic fiber.
