Introduction

Ingredients

4, 8oz packages house brand tofu shirataki noodles
(any shape)
1lb, 93% Lean Ground Beef
1 jar Classico Fire Roasted Tomato and Garlic pasta sauce, (3 cups)
8 oz pkg Baby Bella Fresh Sliced Mushrooms
1 cup, chopped Onions, raw,
3 cloves Garlic (or more to taste)
2 tbsp Basil (or more to taste)
1 tbsp freeze dried Oregano, crushed (or more to taste)
5 tsp Extra Virgin Olive Oil (1 tbsp=3tsp)
2 cups Kraft FAT FREE shredded mozzarella cheese
3/4 cup reduced fat 4 cheese italian,
1/2 oz Parmesan Cheese, freshly shredded
3 cup, sliced Zucchini,
1/2 cup canned diced tomatoes
Directions
makes 8 servings
Drain, rinse, dry fry, 4, 8oz pkgs tofu shirataki noodles to remove as much liquid as possible.
Saute onion, mushrooms, and zucchini in olive oil with herbs,
add sliced garlic then ground beef, cook till beef is browned and veg is cooked through stirring as needed to cook evenly.
Place noodles in 9X11 pan that has been coated in cooking spray, add (drained) diced canned tomatoes evenly over top. Remove meat and veg from pan with slotted spoon and set aside, leaving liquid behind in pan. reduce remaining liquid by half by cooking until thickened, add to 8x11 pan with noodles, top noodle layer with meat and veg. pour tomato sauce evenly over top. Sprinkle cheese over entire surface, with shredded Parmesan on top.
Cook for 20 min @ 425 or until cheese is melted and all ingredients are heated through.
Top Broil for 4-6 minutes or until cheese is bubbly and lightly browned.
Allow to cool for 5-10 minutes before serving. cut in 8 servings and serve as you would lasagna.
