Introduction

Number of Servings: 6

Ingredients

    1 can refried beans (2 cups roughly)
    3-5 tortillas (Depending on the size or your pan, i used 4)
    Salsa
    2 onions, chopped
    tomato paste or Diced tomatoes (I used one can fire roasted diced tomatoes)
    6 cloves of garlic (I minced)
    chili powder
    fajita seasoning (black pepper, salt, coriander, cumin, oregano)
    bell pepper, chopped (green bell pepper, or try red, yellow, or orange for different flavour)

Directions

Preheat oven 400 degrees F

Heat a pan and saute onion until translucent with bell pepper

Mix garlic, one onion, the tomatoes (paste or diced), the seasonings into the refried beans.

Pour a thin layer salsa into your pan, barely coating the bottom. Place a tortilla over the salsa. Then do a layer of beans; Layer of onion and pepper mix; then Layer of cheese (omit if you like); then another layer of salsa. Repeat as desired, until beans and onion/pepper mix are gone.



Serving Size: 6 slices in pie pan.
