Introduction
This recipe is from spark people recipes but I used half fresh eggs and half egg substitute. I also used Mr. Dell's Shredded Hash Browns (frozen 30 oz.) It is pure potato with no additives.Due to the high sodium in the ham I used a mild turkey sausage. I did the math for 12 servings and it came to 179.7 vs. 238. The sodium in my version is 322.5 vs 748 in theirs. 8 servings brings the calories to 269.5 which works for my family. I also used rice milk instead of regular milk. Ingredients

* Mr. Dell's Shredded Hash Browns, 10 cup (1 - 30 oz. bag)
* Onions, raw, 1 medium (2-1/2" dia)
* Green Peppers (bell peppers), 1 cup, chopped
# *Best of the Egg--Egg Substitute, 1.5 cup
# Egg, fresh, 6
# Mild Turkey Sausage removed from casings and browned like ground meat
* *Rice Dream Organic Rice Drink - Original, 1 cup
* Salt, .5 tsp
* Pepper, black, 1 tbsp
Directions
Spray crock pot with Pam.
Divide potatoes, browned turkey sausage so that you can create several layer of each in the crock pot.
Start with the hash browns, then ham, onions, peppers and then the the cheese. Repeat until there are several layers
Beat eggs, egg substitute, milk, salt and pepper -- pour over the layers in the crock pot. Cover and turn on LOW.
Cook for 10-12 hours.
